Glossary of Terms
Poultry Fat: Component remaining after solids and moisture has been extracted in the normal rendering process.
Tallow: Hard fatty substance made from rendered animal fat.
Yellow Grease: Used grease, primarily restaurant and cooking oil, with no more than 15 percent of free fatty acids (FFA).
White Grease: Grease rendered from animal fat, usually pork fat with less than 4 percent of free fatty acids (FFA).
